Did you know?
Baked rhubarb — yes, rhubarb — could help fight cancer. And baking the vegetable is key. Chinese traditional medicine has used Oriental medicinal rhubarb to treat cancer for thousands of years. So, British researchers looked at their native rhubarb and found that baking it for 20 minutes increased the levels of anticancer chemicals called polyphenols. These phytochemicals are known to inhibit cancer cells’ growth and even kill them. The researchers hope to test rhubarb’s polyphenols on cancer cells. For more information on "super foods" that may fight cancer, including healthy recipes, see City of Hope's Super Foods page on Facebook.
